Recipe: Sweet & Sour Coleslaw with Stevia

EORcoleslawTITLEI have always loved the oil and vinegar version of cole slaw, however, the typical recipe calls for 1/2 cup of sugar and Ramen noodles. Not a healthy alternative. As soon as you see Ramen noodles, you know it’s junk.
So I took this classic recipe and substituted some ingredients to elevate its nutritional value, and reduce sugar and MSG.

Sweet & Sour Slaw with Stevia

1/2 cup toasted almonds
24oz of cole slaw mix
1/4 cup sesame seeds
1/4 diced green pepper
Dressing (Mix separately then add to the above ingredients)

1 cup vegetable or canola oil
1.5 tb. Stevia
1/3 white vinegar
1 ts. soy sauce

EORcoleslaw_sideTop with crunchy Chinese noodles. I get it these are not the best thing for you but they are healthier and tastier than Ramen!

You’ll notice when you mix the dressing that the Stevia helps emulsify the oil and vinegar. Stevia has a bit of an absorbent quality that helps give this dressing a nice consistency.

There are going to be plenty of opportunities this summer to share this crowd-pleaser recipe without adding to the gluttony of picnic fare.

    Is that 1.5 Tablespoons of stevia? Seems like too much…

      nevermind I looked at another recipe that called for one cup sugar and see that 1.5 Tablespoons of stevia is equal to one cup of sugar… one cup of sugar seems like a lot to me too but I have tasted this slaw and love it!

        I know, it’s kind of crazy how much sugar goes into these recipes! Thank goodness a sugar substitute was a good fit in this recipe.
