Recipe: Sweet and Savory Deviled Eggs – also works for Egg Salad Sandwiches

First off, are you one of the millions who tuned in last week to the Big Bang Theory episode where Sheldon likened his assistant to an egg salad sandwich? Well that’s what got me thinking about yummie egg recipes.

I formulated this recipe when I discovered we were out of McCormick’s Pinch of Caribbean. It has a bit of sweetness to it that I liked in my deviled eggs. Being out of it I naturally went to extremes and substituted cinnamon. My other radical move was to add chopped up craisins. Sound crai-zy? Trust me. This came about because I pick craisins out of my cereal, but cannot bring myself to throw them out. So naturally they got reused in my egg salad and deviled eggs.

Sweet & Savory Deviled Eggs Recipe:

6 hard-boiled eggs, peeled and halved lengthwise
4 tbs. mayo
1/4 ts black pepper
1/4 ts cinnamon
Pinch of salt
1/4 c chopped craisins

Mix egg yolks, mayo, pepper, salt, cinnamon and craisins in a bowl. Spoon into egg whites.

If making egg salad, chop egg whites and mix in with yolk mixture.
